Gluten is not the only food that attacks those with the celiac disorder.
For the longest time, people thought that gluten is the only thing that affects those with celiac disease. Celiac disease is most close to a disorder of the immune system. When a person with celiac disease eats foods with gluten in it, even a tiny bit, the immune system will react in a certain way and the person will end up really sick. The common symptoms are vomiting, diarrhea, constipation and the likes.
Anyway, for those with celiac disease, it was found out that gluten is not the only thing in the stay-away-food-list. Scientists from Columbia University concluded that wheat protein can also trigger a bad immune system response on those with the celiac disorder. The article on the study was titled “Specific Nongluten Proteins of Wheat Are Novel Target Antigens in Celiac Disease Humoral Response” and was posted online by ACS Publications.
