Miso is a paste which has a salty and tangy taste. It is made of soybeans, salt and fungus. The fungus is called kojikin. Hey, I am pretty sure you are raising your eyebrows right about now. Just don’t! People in Japan won’t be eating this if it is not healthy at all. Kojikin is also called “Aspergillus oryzae” and this fungus looks like rice.
