Is it possible to switch bread, pasta or anything with carbs to zucchini? Well, it is very possible. You don’t have to feel guilty anymore. It’s either you eat everything with lettuce or try zucchini-inspired dishes that are truly yummy and healthy at the same time!
They call it “zoodles” or the zucchini noodles. Can you imagine eating zucchini spaghetti noodles? Well, the texture is chewy and with the perfect sauce, these long strips of zucchini will be your new spaghetti snack.
You can also cut up the zucchini into thin slices and file it up like a lasagna dish complete with meat balls and cheese. If you scoop out the inside of a shell-shape zucchini, you can create baked and stuffed zucchini ensemble as well.

If you want to trim down, then, stay away from pure boiled white rice and switch to zucchini rice. All you need to do is shred the zucchini to make it look like rice except it is “green rice”. If you are going to use a cup of boiled white rice, then, you need to match that with a cup of shredded zucchini. Cook it on a pan with some unsalted butter or a bit of olive oil and add a pinch of salt.
This will be your healthier version of French fries. Just coat the finger-size zucchini sticks with Parmesan cheese and bread crumbs and voila! You have zucchini fries – most definitely lesser in carbs.
Are you fond of eating potato skins? Potato skins taste so good and yet, it is a very sinful snack. So, your “lesser in carbs” alternative to potato skins would be zucchini skins. It is not just lower in carbs, it is nutritious too.
And here it is! If you can transform potato skins and make it into zucchini skins, then, you can most definitely make zucchini chips! But, the zucchini must be baked and not fried, ok? You only need two ingredients to make this – zucchini and salt. That’s it!
Is this for real? Yes, it is true. Some pastry chefs have experiment on zucchini on muffins. They decreased flour and butter but it was replaced with shredded zucchini and banana. After that, there go zucchini muffins!
Zucchini Taco Shells
Let’s just go the extra mile here and make the unthinkable – yes… zucchini can be made into soft taco shells. What you will need: grated zucchini, egg, Parmesan cheese, bread crumbs, pepper, sea salt, garlic powder and cumin. Bake this at 450F with a sheet on the pan because it would stick. Enjoy your zucchini taco!
Last and certainly not the least – drum roll please – Zucchini Pizza! There is nothing in this cooking world, no dish and no recipe that zucchini cannot be an alternative of when it comes to replacing carbs. And what better way to decrease your intake of carbs than to eat zucchini pizza instead of regular pizza. It will be bite-size pizza but still, pizza is pizza. At least, it’s a healthier version.

A hundred gram serving of zucchini contains 17 calories. It has less than a gram of fat and with only 3 grams of carbohydrates. Zucchini also contains a gram of fiber and a substantial Vitamin C content. No wonder it can be a great replacement for carb-enriched foods.
